I have not yet replaced the bbq that was destroyed in Hurricane Sandy. Yes, it is on my “to do” list with many other items. Until then, when the sun goes down and the cool of the evening arrives I made the closest next best thing.
Ingredients:
6 chicken thighs with bone in
For the BBQ Sauce:
¼ cup ketchup
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice or vinegar
1 tsp. brown sugar
½ tsp. garlic powder
¼ tsp. salt
¼ tsp. black pepper
Preheat Oven 350 degrees:
Combine all of the ingredients for the bbq sauce in a small bowl.
Clean and pat dry the chicken thighs.
Place in a baking dish and rub the chicken thighs all over with the sauce.
Place in oven and bake for 40-45 minutes.

Sounds and looks yummy. We eat a lot of fish and chicken here. These would be a great addition. We have a BBQ, but rarely use it at home. Elsewhere we do. Go figure.

We do something very similar at home when we are in a rush. We make it on skinless breasts though. Need to try it on the thighs..
