Fresh Roasted Veggies

The weather is becoming spring like and I love it! It has been a looooooong fall and winter with many changes to my life.
I am looking forward to the rebirth of spring and to see the beautiful flowers bloom and the birds teach me how to spread my wings and soar.
Ingredients:
4-5 bell peppers - sliced
4-5 cloves of garlic - sliced
1 onion - sliced
4 zucchini - yellow or green - quartered
1 jalapeño - sliced with seeds
½ tsp. salt
½ tsp. black pepper
¼ tsp. red pepper flakes
½ tsp. ground oregano
3-4 tablespoons of olive oil
Preheat the Oven 350 degrees:
Place all of the vegetables in a baking pan.  Add the seasonings and the olive oil and place it in the oven to bake for 40 - 45 minutes tossing once during the cooking.
