Pork Burgers with Gingered Rice and Sweet Potato Fries

Dear Friends,
I thought I would show you just how much take out was experienced during this storm by myself, my son and daughter!!! And this does not include the take out from our local pizzeria.
I enjoy a treat of take-out from time to time but this is quite amazing to see just how much take-out was consumed!
I now have lots of little condiment packages left-over to use and must think of different ways to use them. 

I really do not like to waste anything.  I know there is a use for it all.

This is one of the first of many ideas:

Fresh Pork Burgers with Sweet Potato Fries and Gingered Rice:
For the Burgers:
Ingredients:
2 lbs. of boneless pork loin - cubed
Handful of fresh Italian parsley
3 tablespoons of grated Romano cheese
Dashes of salt
Dashes of black pepper
Olive oil for drizzling
Place the cubed pork in a food processor, along with the seasonings, grated cheese and fresh parsley.  Give a few good chops and form into burgers.
Heat a large frying pan with a drizzle of olive oil and add the burgers.  When the burgers are golden on one side gently flip and finish cooking on the other side.
For the Gingered Rice:
Ingredients:
2-3 inch piece of fresh ginger - peeled and finely chopped
Handful of fresh Italian parsley - chopped
4-5 cloves of garlic - chopped
1 large onion - sliced
1 quart of button mushrooms - sliced
3-4 tablespoons of soy sauce
2-3 tablespoons of hot sauce
Dashes of salt
Dashes of black pepper
1 cup of uncooked rice
Olive oil for drizzling
Place in a large bowl the ginger, mushrooms, onions, garlic, parsley, salt, pepper, soy sauce and hot sauce; toss and let stand.
Prepare the rice as directed.
Heat a large frying pan with a drizzle of olive oil and add the marinated mushroom mixture.  Sauté until fragrant, add the rice and continue to sauté for a minute or two.
For the Sweet Potato Fries:
Ingredients:
3 large sweet potatoes - peeled and sliced into fries
Dashes of Salt
Dashes of Black pepper
Olive oil for drizzling
Preheat the Oven 375 degrees:
Place the sweet potato slices in a bowl.  Drizzle with a little olive oil; add the salt and pepper and toss. 
Place on a baking pan and bake until golden on one side.  Turn the potato slice over and continue baking.  About 15-20 minutes on each side.
Place on a paper bag or towel to drain.
This is a fun dinner and very delicious.

    Catherine, Yup...we have a container full of those little packets too...mostly hot or spicy sauces. Pork burgers looked and sounded great! I cooked up a couple of lamb burgers last night. It was a nice change from ground beef. Take Care, Big Daddy Dave

    Although I have to limit pork in my diet, I occasionally have a sausage burger prepared just like a hamburger. Now I can add sweet potato fries! This looks good together and I'm sure just as tasty! Thanks for the share Katherine. Loretta XO
