The radio is playing the 70's hits. It is about 6:20 p.m. and I am thinking I need a little something special to make for dinner; I bought miniature pastries for dessert, after all it is Saturday night. It is fun to listen to these songs, to sing along and do a dance move or two. It is good for the soul to have a little fun, even if it is in your kitchen and you are dancing with the spatula or wooden spoon! Go ahead join me and dance, dance, dance!!
Ingredients:
6 vine ripe tomatoes - quartered
4 cloves of garlic - chopped
1 small red onion - chopped
¼ tsp. salt
¼ tsp. black pepper
¼ tsp. red pepper
¼ tsp. dried oregano
2 tablespoon of olive oil
Fresh grated Romano cheese
1 lb. of your favorite spaghetti
Veggies for Grilling:
2 zucchini - sliced
1 red onion - sliced
10 baby carrots - sliced
3 cloves of garlic
2 tablespoon of olive oil
Heat a large cast iron frying pan with the olive oil. Add the chopped garlic and onion to sauté for a minute or two. Add the tomatoes and the seasoning and simmer on low while you grill the veggies.
Heat a griddle or large cast iron frying pan with the olive oil. Place the sliced zucchini on the griddle and grill on one side until slightly golden. Flip and grill on the other side.
Place the onions, garlic and carrots to grill.
Place the grilled veggies in with the tomatoes.
Cook the spaghetti as directed. Lift out of the water into the pan with the tomatoes and veggies. Drizzle a little extra olive oil over the spaghetti. Grate the Romano cheese and add a little extra red pepper flakes. Toss and serve.

Sounds wonderful Catherine. I have made a mental note of this recipe but I have to admit to being a little ad-hock with my pasta dishes and I don't think I have ever opened a recipe book when cooking them...however I liked what you did with this but can't promise not to tweak it a little!!
