~ Saturday Night Omelet ~

Ingredients:
7 eggs plus a splash of milk - beaten
1 bell pepper - sliced
½ onion - sliced
2 cloves of garlic - chopped
1 tablespoon of pimento olives - chopped
1 tablespoon o f sun dried tomatoes - chopped
1 quart of button mushrooms - sliced
½ cup Monterey Jack cheese - grated
¼ cup parmesan cheese - grated
Dash of salt
Dash of black pepper
Dash of chili powder
Dash of garlic powder
Drizzle of olive oil
Heat a large frying pan with a drizzle of olive oil.  Add the veggies and sauté until the onion is transparent and a nice color is on the veggies.
Crack the eggs in a bowl with a splash of milk, the seasonings and the parmesan cheese and beat.
Pour into the pan with the sautéed veggies and scatter the grated Monterey cheese on top.
Lightly cover the omelet until set.
This is a nice light dinner.
