~ Oven Baked Chicken with Pineapple Juice ~

Ingredients:
10 skinless chicken thighs
½ cup of pineapple juice
Juice of 1 lemon
Drizzle of olive oil
Dash of dried oregano
Dash of ground cumin
Dash of salt
Dash of black pepper
¼ cup of Italian style croutons - crushed
Grated Romano cheese
Preheat Oven 350 degrees:
Place the chicken thighs in a baking pan.
In a small bowl combine the pineapple juice, lemon juice, drizzle of olive oil and the salt, pepper, ground oregano, ground cumin and mix.  Drizzle this over the chicken.
Sprinkle the crushed croutons over the chicken and grate the Romano cheese over the chicken.
Place in the oven and bake 45-50 minutes or until the juices run clear.
This is a fresh and light chicken dish.
