Inside of each and every day is a miracle.

Ingredients:
4 lbs. ground beef
2 tablespoons Worcestershire Sauce
½ tsp. salt
½ tsp. ground black pepper
½ tsp. paprika
¼ tsp. turmeric powder
½ tsp. garlic powder
½ cup milk
1 cup oats
2 eggs
In a large bowl combine all of the above ingredients and mix well.
For The Stuffing:
10 oz. frozen chopped spinach - thawed
3 cloves garlic - chopped
3 sun dried tomatoes - sliced
½ cup marinated peppers - sliced thin
4 oz. mozzarella cheese - shredded
¼ tsp. salt
¼ tsp. black pepper
2 tablespoons olive oil
On a medium to low heat; heat a medium size frying pan with the olive oil; add the spinach, garlic, sun dried tomatoes, marinated peppers and seasonings.  Heat until the garlic is fragrant.
Place the prepared ground beef in a baking pan and shape it into a bowl.  Place the stuffing inside filling from end to end, finishing with the shredded cheese.  Gently, form the ground meat over the top to cover the stuffing.
For the Glaze:
2 tablespoons honey
2 tablespoons Worcestershire Sauce
2 tablespoons Ketchup
Place all of the above in a small bowl and mix.
Spoon the glaze over the top of the meatloaf from end to end.

Preheat Oven 350 degrees:
Bake for 45 - 50 minutes.

Enjoy with Love,
Catherine

I've never made a stuffed meatloaf before. Now I'm trying to think of what wacky things I can stuff in mine. 🙂
