    Pineapple Cake

    The winds are gentle.  The breeze is sweet, fresh and kind.  I look at things and see new.  I have not forgotten what is past but will carry it with me gently.

    Ingredients:
    2 ½ cups flour
    1 ½ cups sugar
    4 tablespoons butter
    2 eggs
    1 cup milk
    ½ cup brown sugar
    ½ cup sour cream
    1 tsp. vanilla
    1 tsp. baking soda
    1 tsp. baking powder
    ½ tsp. salt
    For the Pineapples
    Ingredients:
    1 ½ cups fresh pineapple - cut up
    ½ cup brown sugar
    Preheat Oven 350 degrees:
    In a mix-master combine the butter and white sugar and mix until smooth.
    In a separate bowl combine the milk, eggs, vanilla, sour cream and ½ cup of brown sugar and beat with a fork.  Add this to the mix- master and mix.
    In a separate bowl combine the flour, baking powder, baking soda and salt.  Slowly add this to the mix-master while on low.
    In a small bowl combine the pineapple and ½ cup of brown sugar and stir.
    Prepare a bunt pan with butter; (don't forget to butter the middle piece of the pan) and place the prepared pineapple along the bottom.
    Pour the batter into the pan.
    Bake for 40-45 minutes or until the toothpick test comes out clean.
