    Ingredients

    Cake Mix Crust:

    • 1 box of yellow cake mix
    • 6 tbs. butter, softened
    • 1 cup oats
    • 1 egg
    • 1/4 cup apple juice
    • Flour for dusting

    Chocolate Pecan Filling:

    • 4 eggs
    • 1 cup sugar
    • 1 cup light corn syrup
    • 1/2 tbs. flour
    • 1/4 tsp. salt
    • 1 tbs. vanilla extract
    • 1/4 cup butter
    • 2 cups chopped pecans
    • 1 cup of chocolate chips or chopped chocolate candy

    Instructions

    Cake Mix Crust:

    1. Preheat oven 350 degrees F.
    2. In a large bowl, combine the cake mix, oats, and butter; mix until crumbly. Make a well in the center and add the apple juice; combine to form a dough and form into a ball.
    3. Dust a clean surface with flour and roll out the dough and to fit a 9 inch pie plate or tart pan.
    4. Poke the bottom of the pie plate with a fork and bake the crust for 10 minutes.
    5. Remove from oven and let cool. Set aside.

    Chocolate Pecan Filling:

    1. In a food processor, add eggs, sugar, vanilla, corn syrup, flour, and salt, and blend until combined.
    2. Add the chocolate chips, chopped pecans, and butter, then mix well.
    3. Pour into the cooled pie crust.
    4. Bake 45 -50 minutes or until set.
    5. Let cool and serve with whipped cream or vanilla ice cream
