Cake Mix Crust:
- 1 box of yellow cake mix
- 6 tbs. butter, softened
- 1 cup oats
- 1 egg
- 1/4 cup apple juice
- Flour for dusting
Chocolate Pecan Filling:
- 4 eggs
- 1 cup sugar
- 1 cup light corn syrup
- 1/2 tbs. flour
- 1/4 tsp. salt
- 1 tbs. vanilla extract
- 1/4 cup butter
- 2 cups chopped pecans
- 1 cup of chocolate chips or chopped chocolate candy
Instructions
Cake Mix Crust:
- Preheat oven 350 degrees F.
- In a large bowl, combine the cake mix, oats, and butter; mix until crumbly. Make a well in the center and add the apple juice; combine to form a dough and form into a ball.
- Dust a clean surface with flour and roll out the dough and to fit a 9 inch pie plate or tart pan.
- Poke the bottom of the pie plate with a fork and bake the crust for 10 minutes.
- Remove from oven and let cool. Set aside.
Chocolate Pecan Filling:
- In a food processor, add eggs, sugar, vanilla, corn syrup, flour, and salt, and blend until combined.
- Add the chocolate chips, chopped pecans, and butter, then mix well.
- Pour into the cooled pie crust.
- Bake 45 -50 minutes or until set.
- Let cool and serve with whipped cream or vanilla ice cream
Notes
Storage:
- Store leftovers tightly covered at room temperature for up to 2 days or refrigerated for up to 5 days.
- To freeze, wrap tightly and store up to 2 months. Thaw in the refrigerator overnight before serving.
