    Comfort food comes in many forms and everyone has their own idea of what comfort food means to them. One thing that most can agree on is that buttery flaky biscuits are always a welcomed treat at any meal.

    I feel as if I have been staring out at winter for an eternity; today especially feels long and lingering.

    Inside my office, I keep myself reminded of warmer days with a jar of beach sand to the left of me, a painting of sunflower fields to the right. After sometime however, it becomes abundantly clear that my longings for summer are forlorn and we shall be under winter's spell a little while longer.

    Isn't it amazing how the weather can deeply impact how we feel and affect our outlook on the day? Sometimes though, the bleak weather can work to our advantage, creating the perfect setting for a cozy day spent indoors and a warm family meal.

    Take for instance this morning, when I was greeted by gray skies. The house was cold and damp and I was very nearly tempted to stay in bed a little while longer. I finally enticed myself up with the thought of fresh coffee and a nice spread for breakfast.

    To the comforting sound of the rain outside, I whipped up a big batch of these delightfully flaky, buttery biscuits. I served them alongside eggs and sautéed asparagus with plenty leftover for some asparagus soup later this evening.

    Ingredients

    Units Scale
    • 4 cups flour
    • 8 tbs. butter
    • 11/2 tsp. salt
    • 1/2 tsp. fresh ground black pepper
    • 8 tsp. baking powder
    • 2 cups buttermilk

    Instructions

    1. Preheat Oven 375 degrees F.
    2. Place flour, baking powder, salt, black pepper, and butter in a large bowl.
    3. Add the butter by the spoonful. Use a pastry cutter or fork to crumble shortening to a course consistency.
    4. Stir the buttermilk into the mixture and gently work into a soft ball of dough.
    5. Sprinkle a clean surface with flour.
    6. Place the dough on the floured surface and gently knead four or five times.
    7. Put a little flour on a rolling pin and gently roll the dough until it is approximately 1/2 inch thick.
    8. Use a one-cup measuring cup to cut out the biscuits.
    9. Butter a heavy large cast iron pan and place the biscuits in the pan.
    10. Bake 10 – 12 minutes or until lightly golden.
    11. Serve warm with butter and jam.
