Ingredients

  • 4 cups flour
  • 8 tbs. butter
  • 11/2 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • 8 tsp. baking powder
  • 2 cups buttermilk

Instructions

  1. Preheat Oven 375 degrees F.
  2. Place flour, baking powder, salt, black pepper, and butter in a large bowl.
  3. Add the butter by the spoonful. Use a pastry cutter or fork to crumble shortening to a course consistency.
  4. Stir the buttermilk into the mixture and gently work into a soft ball of dough.
  5. Sprinkle a clean surface with flour.
  6. Place the dough on the floured surface and gently knead four or five times.
  7. Put a little flour on a rolling pin and gently roll the dough until it is approximately 1/2 inch thick.
  8. Use a one-cup measuring cup to cut out the biscuits.
  9. Butter a heavy large cast iron pan and place the biscuits in the pan.
  10. Bake 10 – 12 minutes or until lightly golden.
  11. Serve warm with butter and jam.
