Broccoli Rabe with Spaghetti, Feta Cheese, and Croutons

Ingredients

Units Scale
  • 2 bunches of fresh broccoli rabe, cleaned and stems cut off
  • 8 oz. of feta cheese, crumbled
  • 5-6 cloves of garlic, crushed and chopped
  • 1 cup Italian-style croutons, crumbled
  • Red pepper flakes
  • Olive oil, for drizzling
  • 1 lb. spaghetti

Instructions

  1. In a large pot, cover the broccoli rabe with water and bring to a boil for two to three minutes, enough to soften the broccoli rabe.
  2. Remove the broccoli rabe from the water and set aside. In a large frying pan, heat the olive oil with the garlic and a few dashes of red pepper flakes. Carefully, add the broccoli rabe to the garlic and oil. Continue to sauté the broccoli rabe in the oil and garlic for a few more minutes, and then set aside while preparing the spaghetti.
  3. Add a few drizzles of olive oil to the feta cheese and a few dashes of red pepper flakes and mix.
  4. When the spaghetti is done cooking, lift it out of the water with tongs and add to the broccoli rabe. Add the feta and the croutons to the spaghetti and broccoli rabe and toss.
  5. Drizzle a little more olive oil and a few more dashes of red pepper flakes.

    Thank you Catherine. I'll see if I can find this. Actually we have an International market opening up here in Charlotte, NC soon. Surely they will carry it. I love turnip greens so I will probably like this.

    I love Broccoli Rabe..it goes so well with pasta, but I wouldn't have thought to add feta..what a great idea!

    Martha: Broccoli Rabe is a common vegetable from Southern Italy.
    It is a bitter, delicious vegetable that is related to turnips.
    Usually you can find it in your local grocery store. So I would try different grocery store and see if they have. It's a common veggie in the produce aisle.
