Broccoli Rabe with Spaghetti, Feta Cheese, and Croutons

Ingredients

Units Scale
  • 2 bunches of fresh broccoli rabe, cleaned and stems cut off
  • 8 oz. of feta cheese, crumbled
  • 5-6 cloves of garlic, crushed and chopped
  • 1 cup Italian-style croutons, crumbled
  • Red pepper flakes
  • Olive oil, for drizzling
  • 1 lb. spaghetti

Instructions

  1. In a large pot, cover the broccoli rabe with water and bring to a boil for two to three minutes, enough to soften the broccoli rabe.
  2. Remove the broccoli rabe from the water and set aside. In a large frying pan, heat the olive oil with the garlic and a few dashes of red pepper flakes. Carefully, add the broccoli rabe to the garlic and oil. Continue to sauté the broccoli rabe in the oil and garlic for a few more minutes, and then set aside while preparing the spaghetti.
  3. Add a few drizzles of olive oil to the feta cheese and a few dashes of red pepper flakes and mix.
  4. When the spaghetti is done cooking, lift it out of the water with tongs and add to the broccoli rabe. Add the feta and the croutons to the spaghetti and broccoli rabe and toss.
  5. Drizzle a little more olive oil and a few more dashes of red pepper flakes.

    This looks wonderful. I love broccoli rabe. I like this even better because it sounds easy to prepare.

    It is funny because my grandmother, who also loves broccoli rabe, was asking me yesterday to find some recipes online for her with broccoli rabe in them. I will definitely share this with her, and I know she will be really pleased:)

    This looks delicious but I do have a question. What is Broccoli Rabe? Is it the leaves from the broccoli or another plant entirely? Also, where can it be bought? I don't think I've seen it in my grocery store.
