Soft, crumbly muffins with bursts of sweet blueberries in every bite - what better way to greet Spring?
I feel like it has been ages since I last posted for you.
Life has been hectic lately. We have been planning a lot of posts and we are sharing them all this week, so prepare your inbox for a foodie overload 😉
To get the party started, I am sharing these Easy Blueberry Muffins adapted from Margaret of Tea and Scones. Margaret has a truly delightful blog with an array of wonderful recipes. Mom had been craving blueberries now that the weather is beginning to finally warm up and then, Margaret posted these. It was all too perfect, and soon my very first SRC post was falling right into place.
All morning the house smelled like sweet blueberries! Spring is definitely in the air, I can literally smell it. I cannot wait to get outside now that the days are getting longer, and I eagerly anticipate seeing the tulips and rose bushes bloom. Enjoy!
PrintEasy Blueberry Muffins
- Total Time: 35 minutes
- Yield: 1 1x
Ingredients
- 21/2 cups self-raising flour, sifted
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- Juice of 1/4 lemon
- 300g fresh or frozen blueberries, plus 1 tablespoons of flour to dust on berries
- Granulated sugar, for sprinkling
Instructions
- Preheat oven to 350°F. Line a muffin tin and set aside.
- In a large bowl sift together flour, baking powder and sugar.
- In a separate bowl whisk together oil, egg, milk, vanilla and lemon juice. Slowly add the liquid into the flour mix until just combined.
- In a small bow, coat the blueberries with a tablespoon of flour. Fold the blueberries into the batter. Spoon the mixture into prepared muffin tin. Sprinkle the tops with sugar and bake for 30–35 minutes or until cake tester comes out clean.
- Carefully remove the muffins from the tin and cool on a wire rack.
