Living the Gourmet: Triple Layer Chocolate Cake

Michael was blessed to have two cakes baked for his birthday; one by me and one by his sister. Tammy made the cake for Thanksgiving to celebrate and I made this cake on Sunday. This of course was a delight for Michael, since he is a pleasure to cook or bake for. It was a busy holiday since, Michael's birthday was Friday. I am going to do a redo on the dinner though and extend his birthday to next weekend, since his birthday was squeezed between the holiday. I know he will not mind one bit. This was a nice cake and not difficult to make at all. I know you will love Tammy's cake. It is much more elaborate and was delicious, so stay tuned.

Ingredients

Units Scale
  • 1 Devil's food cake mix
  • 2 cup flour
  • 4 tsp. baking powder
  • 4 eggs
  • 1 cup sugar
  • Pinch of salt
  • 1 medium size zucchini - grated (1 1/4 cup)
  • 3/4 cup cold coffee
  • 1/2 cup milk
  • 1/2 cup canola oil
  • 1 tbs. chocolate extract or vanilla extract
  • Pillsbury Creamy Supreme Cinnamon Bun Frosting

Instructions

  1. Preheat Oven 350 degrees:
  2. Combine all of the dry ingredients in a bowl.
  3. In a separate bowl combine the eggs, zucchini, coffee, milk, oil and extract and mix. Slowly add the dry ingredients and mix about one minute.
  4. Butter 3 baking pans and divide the batter evenly.
  5. Bake about 25 to 30 minutes or until the toothpick test comes out clean.
  6. Remove cake from pan and let cool before frosting.
  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
