Egg Sandwich with Spiced Sautéed Onions
- Total Time: 15 minutes
- Yield: 4 servings 1x
Ingredients
Scale
- 4 eggs - the way you like them
- 1 red onion - sliced
- 2-3 tablespoons ketchup
- 1 tablespoon butter
- 1 tablespoon Worcestershire Sauce
- 1/2 tsp. ground cumin
- 1/4 tsp. turmeric
- 1/4 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- Your favorite bread for the sandwich
Instructions
- In a small saucepan heat the butter with the sliced onions. Add the rest of the ingredients and sauté until the onions are soft.
- Prepare the eggs the way you like them and get the toast ready along with a good cup of coffee.
- Breakfast is served!
- Prep Time: 5 minutes
- Cook Time: 10 minutes

Yes indeed, sometimes the simplest dish brings back sweet memories too. When we were kids, a Friday night meatless dinner was sometimes Onions and Eggs Omelet. (personally peppers and eggs were one of my favorites:) Of course we didn't have nearly as many lovely seasonings. Perhaps parsely sometimes:) We did, however, usually have a fresh loaf of Italian bread and a big bowl of salad with the works!
Your sandwich sounds so good, minus the ketchup:) It just happens to be Friday and yes, there are always all kinds of onions in the house. Thanks for sharing, Catherine...I'm off to ask Marion if she would rather have this for dinner or, Linguine with Clam Sauce:)
