-A Sunday in October-
There is something beautiful, poetic and calming about the beach on the off-season.
The family and I decided at the last minute yesterday to take a drive to the shore. We walked along the Jones Beach boardwalk a little, and then sat at the benches - talking, laughing, bonding...it was a beautiful day. I couldn't have asked for anything more.
After a couple of hours we made our way back home where we prepared a comforting Sunday meal together.
Tammy made some carrot cake/cheesecake cupcakes and I got started on oven fried chicken, broccoli rabe and creamy mashed potatoes.

Oven Fried Chicken with Broccoli Rabe & Mashed Potatoes
- Total Time: 40 minutes
- Yield: 8-10 servings 1x
Ingredients
- 8 - 10 chicken legs
- 2 cups flour
- 1 1/2 cups milk
- 1 1/2 tsp. mustard
- 3 - 4 tbs. canola oil
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
For the Broccoli Rabe:
- 1 head of broccoli rabe
- 1/4 cup of water
- 4-5 cloves of garlic
- Red Pepper flakes
- Salt
- Olive oil
For the Mashed Potatoes:
- 5 lbs. of potatoes - peeled
- 2 cups of milk
- 1/2 medium onion - diced
- 1 tsp. Vegeta seasoning
- 1/4 cup of sour cream
- 2 - 3 tbs. of butter
- 1/2 tsp. black pepper
- 1/2 tsp. salt
Instructions
For Oven Fried Chicken:
- Preheat Oven 350 degrees:
- Remove the skin from the chicken legs. Set two shallow bowls; one for the flour and one for the milk. Add the mustard to the milk and stir. Add the seasonings to the flour and mix.
- Dip the chicken first in the flour then in the milk and back in the flour. Place the chicken in a baking dish and drizzle with the canola oil.
- Bake 50 - 55 minutes until the chicken becomes and nice golden and the juices run clear.
For the Broccoli Rabe:
- Cut the hard stems from the broccoli rabe.
- Heat a large frying with 2 – 3 tablespoons of olive oil. Add the garlic and let the garlic become fragrant. Carefully, add the broccoli rabe and cover with a colander so that the oil does not splatter.
- Add a ¼ tsp. of red pepper flakes and ¼ - ½ tsp. salt. Add the water and cover with the colander until the broccoli rabe becomes tender.
For the Mashed Potatoes:
- Place the potatoes in a large pot to boil with a tsp. of salt.
- Heat the milk with the diced onion, Vegeta seasoning and butter; do not boil. Have this heated and ready just before the potatoes are ready to drain..
- When the potatoes are fork tender; drain; add the heated milk mixture, sour cream salt, pepper and mash. If the potatoes need to be creamier add more milk a little at a time until the desired consistency is reached.
- Prep Time: 10 minutes
- Cook Time: 30 minutes

Dear Catherine, Tammy and Michael...What a lovely Sunday at the beach with the family! I am so happy that you all that you enjoyed the day. I used to love to take a ride to Jones Beach when my son was young. We would walk the boardwalk, have an ice cream cone and he would love the sand. Sometimes they would have a band playing in an area and the older folks would get up and dance. That was always fun to watch. I do not know if they still have that, but times do change and my son now is 39. But what doesn't change is your fabulous posts and recipes. Love this meal and I like that you all had a hand in this one. Your photo looks very delicious and inviting. Love all of your choices and they really go well with each other. Dearest Tammy and Catherine. I have been absent from keeping up with my favourite blogs for such a long time I now find I have a little time to play catch up so you can imagine my delight after being absent for so long to be able to spend a wonderful Sunday with you.
