    Today's Caesar Salad starts off with crisp Romaine lettuce leaves, thinly sliced red onions, and crunchy cucumbers, tossed with savory Parmesan cheese and golden croutons. As no Caesar Salad is complete without its signature creamy accompaniment, we'll be topping ours with a homemade Caesar Dressing, made eggless with a mix of olive oil and mayonnaise, along with capers, cheese, salt and pepper. The end result is a smooth and creamy dressing that's equal parts decadence and deliciousness.

    This salad is best served as a refreshing starter or side dish, but with the addition of grilled chicken or shrimp it can also stand in as a satisfying lunch or a light dinner. And that versatility is key. This salad can easily be kicked up with the addition of marinated peppers, mixed seafood, or additional veggies like radishes or carrots. Think of today's recipe as a canvass to let your creativity shine.

    However, while I'm all for creativity, I'm simply in love with the simplicity of this recipe, as with just a handful of fresh ingredients you can whip up this salad, homemade croutons and dressing, and sit down to a restaurant-worthy dish. So, whether you're hosting a casual lunch or craving a light yet satisfying dinner, this recipe has got you covered.

After that, we chop up the veggies, and toss with grated cheese and the croutons to combine. Then we finish it with a drizzle of the Caesar dressing and we're done.
    • Pairings: All the usual salad pairings. This salad pairs particularly well with grilled chicken, seared steak, or light seafood. You can also dress up the salad by adding grilled shrimp or chicken to turn it into a main course on its own. Additionally, this salad pairs wonderfully with a glass of crisp white wine or a refreshing iced tea.

    Ingredient Checklist - Everything You'll Need

    1. Romaine lettuce:
      • Notes: My go-to green for homemade salads. As always, ensure the lettuce is fresh and crisp for the best texture.
      • Tips: Wash and dry the lettuce thoroughly before chopping.
      • Substitutions: Baby romaine, spinach, or mixed greens can be used as alternatives.
    2. Red onion:
      • Notes: Provides a mild onion flavor and a pop of color to the salad.
      • Tips: Slice the onion thinly for even distribution throughout the salad.
      • Substitutions: White or yellow onion can be used as substitutes.
    3. Seedless cucumber:
      • Notes: Adds a refreshing crunch and a bit of moisture to the salad.
      • Tips: Use a mandoline slicer for thin, uniform slices.
      • Substitutions: English cucumber or regular cucumber with seeds removed can be used.
    4. Grated Parmesan cheese or Romano cheese:
      • Notes: Adds a savory and salty flavor to the salad.
      • Tips: Use freshly grated cheese for the best taste and texture.
      • Substitutions: Feta, Pecorino Romano or Asiago cheese can be used as alternatives.
    5. Croutons:
      • Notes: Provide a crunchy texture and absorb the dressing.
      • Tips: Homemade croutons are easy to make by cubing and toasting bread with olive oil and seasoning.
      • Substitutions: Store-bought croutons can of course be used in place of homemade.

    For Caesar Dressing:

    1. Olive oil:
      • Notes: Add richness and smoothness to the dressing.
      • Tips: I do suggest using a quality, extra-virgin olive oil for the best flavor, as the taste of the oil does indeed come through in this recipe.
      • Substitutions: Your preferred olive oil substitute can be used, such as avocado oil.
    2. Mayonnaise:
      • Notes: This is how we get around using raw egg. In short, the mayo provides the base of the dressing, providing creaminess and body.
      • Tips: Use full-fat mayonnaise for a richer dressing, otherwise it may turn out watery.
      • Substitutions: As the mayo is itself a substitute for raw egg, there aren't a whole lot of options. However, you might try using Greek yogurt or sour cream.
    3. Apple cider vinegar:
      • Notes: Adds acidity and tanginess to balance the richness of the dressing.
      • Tips: Use high-quality apple cider vinegar for the best flavor.
      • Substitutions: White wine vinegar or lemon juice can be used as alternatives.
    4. Capers:
      • Notes: Contribute briny and tangy flavor to the dressing.
      • Tips: Do 'not' rinse the capers. I honestly don't know how or why this trend started. Caper-flavor 'is' the brine. So when you rinse off the capers you are - literally, yes literally - rinsing away what gives the capers their flavor. Don't do it. Together we can break this anti-gourmet, anti-flavor trend.
      • Substitutions: Anchovies, chopped green olives, or Dijon mustard can all work to provide a similar flavor profile.
    5. Salt and coarse ground black pepper:
      • Notes: Enhance the overall flavor of the dressing.
      • Tips: Adjust seasoning according to taste preferences.

    Storing Leftover Salad and Dressing - 7 Tips for Freshness

    1. Separate Dressing and Salad: If possible, store the salad and dressing separately to prevent the lettuce from becoming soggy. Place the salad in an airtight container and the dressing in a separate container with a tight-fitting lid.
    2. Refrigeration: You'll want to refrigerate leftover salad and dressing promptly to keep them fresh. Place them in the refrigerator within two hours of preparation to minimize bacterial growth. I would also suggest refrigerating the salad immediately after preparing it if you aren't going to eat it right away.
    3. Use Airtight Containers: As mentioned above, store the salad and dressing in airtight containers to maintain freshness and prevent cross-contamination with other foods in the refrigerator.
    4. Label and Date: Label the containers with the date of preparation to track freshness. Proper labeling helps you identify the contents and ensures you use them within a safe timeframe.
    5. Consume Within a Few Days: I don't suggest keeping leftover salad for more than 2-3 days. After this time, the salad may become wilted and brown looking. The dressing will start to lose its flavor and texture after 3 days.
    6. Revive Before Serving: If the salad leaves have wilted slightly, you can revive them by tossing them with a little fresh dressing just before serving. Adding a splash of lemon juice can also help brighten the flavors.
    7. Avoid Freezing: I cannot believe how often this question is asked. No, don't freeze salad, and do not freeze salad dressing. The lettuce will become mushy upon thawing, and the dressing will be entirely ruined upon thawing. Freezing salad is a no-no.

    Ingredients

    Units Scale

    Caesar Salad:

    • 1 head of Romaine lettuce, rough chop
    • 1 red onion, sliced thin
    • Seedless cucumber, sliced thin
    • Grated Parmesan cheese or Romano cheese
    • Croutons (see recipe below)

    For Fresh Croutons:

    • 6 cups of cubed artisan bread (ie: Italian, French, etc.)
    • 4 - 5 tbs. olive oil
    • 1 tsp. salt
    • 1 tsp. coarse ground black pepper
    • 1 tsp. dried oregano
    • 1/4 cup fresh grated Parmesan or Romano cheese
    • Parchment paper

    Caper Caesar Salad Dressing:

    • 1/2 cup of mayonnaise
    • 1/4 cup of olive oil
    • 3 tbs. apple cider vinegar
    • 2 tbs. capers
    • 1/2 tsp. salt
    • 1/2 tps. coarse ground black pepper
    • 1/4 cup fresh grated Parmesan or Romano cheese

    Instructions

    For Fresh Croutons:

    1. Preheat oven to 375 degrees F.
    2. Place the cubed bread in a large bowl.
    3. Add the olive oil, seasonings, and grated cheese and toss.
    4. Place on a baking sheet lined with parchment paper.
    5. Bake for 20 - 25 minutes until the croutons are golden and crisp.
    6. Allow the croutons to cool before placing them in the salad.
    7. Refrigerate any leftover croutons in an airtight container.

    Caper Caesar Salad Dressing:

    1. Place all of the ingredients for the dressing in the bullet attachment of the food processor and process.
    2. Refrigerate until ready to use.

    Build the Salad:

    1. Place the rough chopped Romaine in a bowl and toss with the desired amount of sliced onion, grated cheese, croutons, and cucumber.
    2. Drizzle with the salad dressing and serve.
