- Baking Powder. This acts as a two-stage leavening agent. The recipe simply does not work without it.
- Salt. Simple table salt is what you’re looking for.
- Evaporated Milk. We’re using evaporated milk because it has a thicker, creamier consistency than regular milk, which makes it great for creating richer and more flavorful baked goods – which is exactly what we want here. As a nice bonus, it’s also shelf-stable, which means it can be stored for longer than regular milk. That said, evaporated milk is a great addition to many baking recipes simply because of how it enhances the texture of virtually anything it’s added to, from cakes and cookies, to pudding and, yes, today’s scones. I do recommend learning to work this ingredient into your baking repertoire.
- Turbinado Sugar. Think of Turbinado Sugar as the halfway point between fully raw and fully processed sugar. Produced by evaporating sugarcane juice, turbinado sugar has a light brown color and a coarse texture, with a mild molasses flavor and a ‘slightly sweet’ taste. It is a great ingredient for baking, as it adds a unique flavor and texture to cakes, cookies, and other baked goods. Also, it’s just plain fun to say “Turbinado.”

Strawberry Guava Scones
- Total Time: 25 minutes
- Yield: 10 scones 1x
Ingredients
- 2 cups AP flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- Pinch of salt
- 5 tablespoons unsalted butter
- 3/4 cup evaporated milk, plus more for brushing
- 1/3 cup Mark T. Wendell Guava Strawberry Fruit Blend
- Turbinado sugar, for sprinkling
Instructions
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large bowl mix flour, sugar, baking powder, salt, and butter with a pastry blender until crumbly.
- Add evaporated milk and mix to combine until a sticky dough forms. Fold in the tea and turn the dough out onto a well-floured surface.
- Using your desired cutout or pastry knife, cut out 8 even sized scones.
- Place on the prepared baking sheet, brush with remaining evaporated milk and sprinkle with Turbinado sugar.
- Bake for about 15 minutes until the scones are lightly golden.
- Let cool slightly before serving.
