Warm and sweet, these Pumpkin Spiced Biscotti evoke all the flavors and feelings of the cozy season. With just a drizzle of white chocolate and a sprinkle of cinnamon sugar, these are perfect served alongside your favorite hot beverage.

While looking at the calendar the other day I realized we're nearly half way through September. How is that even possible?
I have a long string of Autumn recipes I've been working on and have been sharing bits and pieces of that content pool here and there since everyone seems to be demanding all the fall things pretty early this year. I'm excited to be sharing them with you too and can't wait for what's to come.
I can already sense fall slowly settling in over here. The days are still humid and a slight dampness seems to settle in at night. I'm still waiting for the leaves to change but I have taken notice at how early it gets dark here already.

I'm excited to be kicking off the new season with old friends. Today I am partnering up with Continental Series who were kind enough to send over their beautiful espresso machine.
If you've been a long time reader of LTG, then you know how much I love my coffee. I can't start my day without it.
Growing up however, espresso was considered an evening delight. I have many fond memories watching my parents stand over the stove, watching the process of perfectly brewed espresso in the old-fashioned moka pot. Ah we've come a long way haven't we?
When I first opened the Continental Espresso Maker, I felt slightly intimidated. I was only familiar seeing these fancy coffee brewing machines at local shops. Having one all to myself? Now, this is the life. 😉

The process is shockingly easy plus there is a steamer attachment to froth milk. The entire process takes about 5 minutes total from start to finish. Needless to say, my morning routines are looking a bit more upscale these days and to complete the mood, I of course made a batch of biscotti, because why not?
There is just something so picturesque about chill mornings and something a little sweet for breakfast, whether it be a slice of banana bread or a coffee cookie.
I have a lot of baked breakfast goods planned for the season and to kick it all off, we're going to start with a batch of Pumpkin Spice Biscotti drizzled with white chocolate and cinnamon sugar. Salutè!

Pumpkin Spice Biscotti
- Prep Time: 10 minutes
- Cook Time: 1 hour 5 min
- Total Time: 1 hour 15 minutes
- Yield: 1 dozen cookies 1x
- Category: Dessert
- Method: Bake
- Cuisine: Italian
Ingredients
- 4 tablespoons butter, softened
- 1/2 cup granulated sugar
- 1 1/2 teaspoons pumpkin pie spice
- 1 1/2 teaspoons baking powder
- Pinch of salt
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup pumpkin puree
- 2 cups AP flour
Toppings:
- 1/3 white chocolate chips, melted for drizzling
- 1/2 cup granulated sugar
- 2 teaspoons cinnamon
Instructions
- Preheat oven 350 degrees F. Line a large baking sheet with parchment paper and set aside.
- In the bowl of your stand mixer, beat butter, sugar, pumpkin spice, baking powder, and salt until smooth and creamy.
- Beat in eggs, vanilla, and pumpkin puree. At a low speed, slowly incorporate the flour until a sticky dough comes together.
- Transfer over to the prepared baking sheet and shape into a 12" rectangular log.
- In a small bowl, combine sugar and cinnamon for the cinnamon sugar topping. Sprinkle over the log and bake for 25 minutes. Remove the log from the oven.
- Reduce the oven temperature to 325 degrees F.
- While the log is still hot but slightly cooled, about 5 minutes, use a serrated knife and slice the log crosswise. Now bake the biscotti again for 40 minutes, until they start turning a golden brown around the edges. Turn off the oven and let them cool in the oven.
- Remove the biscotti once they are completely cool. In a double-boiler, melt down the white chocolate. Drizzle over the biscotti and sprinkle with the reserved cinnamon sugar. Serve and Enjoy!
- Store in an airtight container in the refrigerator.

Catherine, My better half loves espresso and we both love a good biscotti. We've never tried a pumpkin spice biscotti though but it sure sounds good...with espresso or just a good cup of strong coffee. Take Care, Big Daddy Dave
