As the long, balmy days of summer slowly begin to wind down, we begin to ease ourselves gently back into an old familiar rhythm. We trade beach bags for school books, while lazy nights turn into long study sessions. While we transition into our back-to-school routine, it’s important to keep balance without sacrifice.
With that said, I'm pleased to be partnering with one of my favorite brands today, Coleman Natural Foods. Their Uncured Polish Kielbasa is a better-for-you option that contains no artificial ingredients or preservatives and uses pork sourced from American Humane Certified farms. Plus, it doesn‘t require a trip to any specialty stores to find.
For today's recipe, I was inspired by the busy back-to-school season to create one of my family's favorites- homemade pizza rolls. This recipe is so easy to create and perfect for those after-school functions and weekend gamedays.
I've included the recipe to my fresh pizza dough below, but store-bought works perfectly fine here too.
For a finishing tough, I brushed the pizza rolls with melted butter and sprinkled with a garlic salt and oregano topping.
These rolls can also be made ahead and reheated for a next day lunch or snack. And yes, you can also freeze them just like any other pizza pocket. To store, simply wrap each roll individually in foil, and store in a freeze bag. Serve alongside your favorite marinara or dipping sauce and enjoy!

Ingredients
Homemade Pizza Dough:
- 1 packet instant active yeast
- 1 1/2 cups warm water
- 1 teaspoon sugar
- 3 1/2 cups AP flour
- 2 teaspoons salt
- 3 tablespoons olive oil
- 12 oz. Coleman Natural Polish Kielbasa, sliced
- 1 fresh pizza dough
- 1 cup favorite marinara sauce
- 1 cup fresh mozzarella, shredded
- 1/4 cup unsalted butter, melted for brushing
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Pinch of salt and pepper to taste
Instructions
Homemade Pizza Dough:
- Proof your yeast by combining yeast, warm water, and sugar. Let stand for 10 minutes until the yeast is frothy.
- In a large bowl, combine flour and salt. Add the proofed yeast and olive oil. Stir to combine, until a sticky dough comes together.
- Turn out onto a lightly floured surface and knead your dough. The dough should be still slightly sticky but smooth. Transfer to a lightly oiled bowl, cover, and let rise about 2 hours or until doubled in size.
Pizza Rolls:
- In a medium cast-iron skillet, cook the sliced Kielbasa until golden brown. Transfer to a glass bowl and set aside.
- Preheat oven to 375 degrees F. Line two baking sheets with parchment paper and set aside.
- Roll out the fresh pizza dough on a well-floured surface into a 16-inch rectangle about ¼ inch thick. Using a pastry knife, cut the dough into triangles.
- Brush each triangle with about 1 tablespoon of sauce, topped with the sliced Coleman Natural Kielbasa, and the shredded mozzarella. Roll the triangle starting with the wide edge, tucking the pointy edge under the roll. Repeat this process with the rest of the remaining dough.
- In a small bowl, combine the grated Parmesan, garlic powder, oregano, salt and pepper. Brush each roll with the melted butter and sprinkle the garlic seasoning over each.
- Bake the rolls until they have puffed and are golden with the cheese melting through, about 25 minutes or so depending on the temperature of the oven. Serve and enjoy!

Catherine, I love the idea of pizza rolls...but not with kielbasa no matter how great the quality of the sausage is. Pepperoni or spicy Italian sausage for me! A local restaurant ran out of their Italian sausage and substituted kielbasa...just didn't do it for me...and I love good kielbasa! Take Care, Big Daddy Dave
