These soft, chewy fudge brownie cookies are speckled with M&M's® for an extra chocolaty treat!
Poets are fond of comparing this life to a candle. Youth strikes up like a flame from a match, and life opens up before us, experiences brimming up only to dissipate like smoke into the air. The flame crawls along the wick, until waxen tears are all that remain of the flame's journey. Indeed, poets are often fond of talking about life in gallows terms.
How pleasant.
Personally, I like to like think of life more in terms of, well…cookies.
Nothing quite says 'fun' or 'celebration' the way a cookie does. While our grand and treasured memories are precisely that, it is the simple pleasures that punctuate our day to day lives that prove to be of the most reliable and lasting value. Whether it's glimpsing a sunrise, taking break from one's desk, or just sneaking that afternoon or midnight treat, these are the things that keep us sane and remind us of our humanity. For me, that positively screams 'cookies.'
I'm particular, however, when it comes to my circular confections. I prefer them bitingly sweet, soft, fudge-like or brownie-like, and they have to 'look' festive. Yes, all corners of my ancestry would consider that a recipe for heresy, but I…well, I just can't help myself.
It was need for such confections and 'little pleasures' that was the source of inspiration behind today's recipe, which is actually quite simple - simplicity being another minor joy. The base is a brownie box mix, and the 'secret' ingredient, the source of the recipe's festive nature, is a helping of plain M&M's®, which I speckled within the cookies for a bit of crunch and color.

Ingredients
- 1 brownie box mix
- 1/4 cup flour
- 1/4 cup vegetable oil
- 3 tbs. water
- 2 eggs
- 1/2 cup M&M's® candies
Instructions
- Preheat Oven 350 degrees F.
- In a large bowl combine the brownie mix, flour, vegetable oil, water, eggs and mix together with an electric mixer for about 1 minute. Stir in the M & M candies.
- Drop teaspoonfuls of batter on a prepared baking sheet; about 2 inches apart.
- Bake 8 – 10 minutes.
- Let the cookies rest on the baking sheet for a minute or two before removing to a cooling rack.

After "playing" outside in the garden on this beautiful day, Catherine, I can think of nothing I would LOVE more than a couple of those enticing cookies. Brownies are my go to "I need a break snack" Roll them up as cookies and I am in heaven!!!
