These Lasagna Rollups are a light, yet hearty winter meal. With sweet notes of citrus perfectly balanced with a savory red sauce and a three-cheese filling, this dish is sure to delight your senses!

There are so many versions of lasagna for the imagination to take us. I do believe that we are only limited by our ability to dare to dream. I am guilty of dreaming and dreaming often, because without our dreams life would be rather dull and without a star to reach for.

I suppose I am going on a bit too long about my dreaming. However, even with a dish such as this I dream of being in a far off and from what I see in pictures, a rather romantic looking place called Italy.

I have often told you that with music, table setting, and a good companion we have the ability to be off to many a faraway land; such was the case with this lasagna dish.

We did enjoy this dish. It is sweet, yet savory and was quite welcomed at the table.

So, put a little Sinatra or Dino on and off we go…

Ingredients

Units Scale
  • 1 lb. of lasagna noodles

For the Sauce:

  • 29 oz. can of crushed tomatoes
  • 3 cloves of garlic - chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. red pepper flakes
  • 1 tsp. sugar
  • 1 tsp. dried oregano
  • Juice of 1/2 lemon
  • 1/2 cup of chicken broth
  • 1/4 cup chopped fresh basil
  • 2 roasted bell peppers
  • 1/2 roasted onion
  • 3 roasted beefsteak tomatoes
  • 2 - 3 tbs. olive oil

For the Filling:

  • 32 oz. ricotta cheese
  • 10 oz. frozen chopped spinach
  • 1 clove garlic - chopped
  • 1 egg
  • 1/2 cup Parmesan cheese - grated
  • 1/2 cup mozzarella cheese - grated
  • 1/2 cup of mozzarella for topping the noodles
  • 1/2 tsp. black pepper
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. cinnamon
  • 1 tsp. sugar

Instructions

  1. Prepare the noodles as directed.
  2. Preheat Oven 350 degrees.
  3. Place the peppers, onion, and tomatoes on a baking sheet and roast for about 20 - 25 minutes. Remove from the oven; let cool and give a few chops in the food processor.
  4. Heat a large frying pan with the olive oil. Place the chopped veggies, along with the chopped garlic and sauté until the garlic is fragrant.
  5. Add the crushed tomatoes, chicken broth, lemon juice and seasonings. Simmer on a low heat, while preparing the roll-ups.
  6. For the Filling:
  7. Preheat Oven 350 degrees.
  8. Remove all the water from the spinach.
  9. Heat a large frying pan with a tablespoon of olive oil. Add the garlic and the spinach and sauté for the garlic to become fragrant; then turn the heat off and let cool.
  10. In a large bowl place the ricotta cheese. Add the egg, cheeses and all the seasonings. Add the cooled spinach and mix.
  11. Lay the lasagna noodles flat and spoon the length of the noodle with the ricotta mixture. Do not overfill. Roll the noodle up and place in a baking dish. Continue this process until all of the ricotta mixture is used up.
  12. Cover the roll-ups with the sauce and extra mozzarella and grated cheese.
  13. Bake 30 – 35 minutes.

    YEAH! Finally something with no red meat! I cannot eat any beef or pork. This looks so good. And it is very close to a recipe that I make. I do not use the cinnamon,but now I will! That would taste so good!

    Dear Catherine,
    Love Lasagna and going meatless is my favorite. Yours looks amazing and perfectly rolled up. I especially love the spinach and the touch of cinnamon. My grandmother always added cinnamon to her Lasagna. A little secret, I won't tell if you don't. One of my really favorites is the ends of any baked pasta, when it is crunchy. Yours looks like that from the photo. Yum, Yum..I am going to try your version. Like you said it is that time of years when it is cold and this is a comfort food for me anyway.
