Cornbread Fritters with Honey Chili Dipping Sauce Featuring Fleischman’s Simply Homemade Cornbread Baking Mix

Here at Living the Gourmet, Simply Homemade Cornbread Baking Mix helped kick our Summer Cornbread Fitters up to the next level. For our fritters, we combined spicy jalapeno, the rustic subtly of sun dried tomatoes and fresh onion, and a pungent infusion of fresh lemon zest to create the perfect summer fritter. Then, fried to a perfect, golden crisp, and complimented by a sweet and spicy glaze of fresh lemon juice, chili garlic sauce, and honey, these Summer Fritters are taken to a whole new realm.

–Ingredients–

For Cornbread Fritters:

1 box of Fleischman’s Simply Homemade Corn Bread Baking Mix
1 small onion – diced
1 egg
¾ cup milk
1 grilled jalapeño – chopped
2 tbs. sun dried tomatoes – chopped
1 tsp. ground cumin
1 tsp. dried oregano
½ tsp. black pepper
½ tsp. salt
Zest of 1 lemon
Canola oil – for frying
Lemon wedges for garnish

For Honey Chili Dipping Sauce:

¼ cup honey
Juice of ½ lemon
1 tsp. chili garlic sauce

–Instructions–

For Cornbread Fritters:

In a large mixing bowl combine the Fleischman’s Simply Homemade Corn Bread Baking Mix, ground cumin, dried oregano, salt and black pepper.

In a medium mixing bowl beat the egg with a fork. Add the onion pieces, milk, grilled jalapeño, sun dried tomatoes and lemon zest.

Stir the wet ingredients into the large bowl with the Fleischman’s Simply Homemade Corn Bread Baking Mix.

Heat a large frying pan with approximately ¼ inch of canola oil.

Carefully, drop the batter into the hot oil using 1 heaping teaspoon for each fritter.

When the fritter is firm and golden on one side carefully turn over and cook until golden on the other side.

Place the fritters on paper towels when removed from the frying pan.

Plate the corn fritters and garnish with the lemon wedges.

Serve with the honey lemon chili dipping sauce.

For Honey Chili Dipping Sauce:

Combine all of the above for the dipping sauce in a small bowl and stir.
