These muffins are a healthful way to start your day with bits of sweet raisins and moist carrots.
PrintLight Carrot and Raisin Breakfast Muffins
- Total Time: 25 minutes
- Yield: 1 dozen 1x
Ingredients
- 3/4 cup spelt flour or unprocessed bran
- 1/2 cup sugar
- 1 cup buttermilk or milk with 1 tablespoon white vinegar or lemon juice
- 1 egg
- 1/4 cup vegetable oil
- 1/2 cup raisins
- 2 carrots - grated
- 2 cups self-rising flour
- 1/2 tsp. cinnamon
Instructions
- Preheat Oven 350 degrees:
- Prepare muffin tins with butter.
- In a large bowl, combine all of the above ingredients and mix with a spoon.
- Bake the muffins 15 – 20 minutes or until toothpick test comes out clean.
- Serve with cream cheese or honey.
- Prep Time: 5 minutes
- Cook Time: 20 minutes

Dearest Catherine, First I have to say I love the new logo of "Living the Gourmet" very nice with the roses on the side. Second your poem is so lovely, I can relate because I had a chair that was given to me from my mom. This chair everyone sat in when I was young in my mom's living room. It was a huge brown overstuffed chair which I loved to sit and read my books. I often used to sit and think of all the people who sat in it and the good times we had and the sad times as well.
