If this whole 'winter in March' thing is keeping you down, try a slice of this Banana Apple Loaf with a cup of tea or coffee. It will surely help you cope.

The center is filled with warm, delicious fruit and topped with a light cinnamon drizzle.  It's mostly sweetened with fruit so this loaf is perfect for either breakfast or an after-dinner delight.

Ingredients

Units Scale
  • 3 ripe bananas
  • 1 apple, diced
  • 1/4 cup raisins
  • 1/2 cup oats
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 4 tablespoons canola oil
  • 1 1/2 cups self-rising flour

Cinnamon Icing Drizzle:

  • 1/2 cup confectioner's sugar
  • 2 teaspoons whole milk
  • Dash of cinnamon

Instructions

  1. Preheat oven to 350 °F.
  2. Butter a loaf pan.
  3. In a medium glass bowl, combine fruit and oats and toss. Set aside.
  4. In the bowl of your stand mixer, beat sugars, egg, and oil until smooth.
  5. Add the fruit and beat on low speed until everything is well incorporated. Add the flour a ¼ cup at a time.
  6. Pour batter into the loaf pan and bake for about 30-40 minutes or until golden brown and the cake tester comes clean.
  7. Leave the loaf in the pan to cool on a wire rack.
  8. In a small bowl, whisk ingredients for cinnamon icing. Drizzle over cooled loaf and let set for about 10 minutes.
  9. Serve with a cup of coffee or tea.
