Ingredients:
For the Cranberries:
½ cup dried cranberries
¼ cup milk
For the Muffins:
2 eggs - beaten
¼ cup milk
1 tsp. baking powder
1¾ cups flour – sifted
¼ tsp. salt
¼ cup sugar
2 – 4 tablespoons butter – melted
1 tablespoon baking powder
Preheat Oven 350 degrees:
Soak the cranberries in the milk.
Gently melt the butter.
In a bowl, combine the sifted flour, sugar, salt and baking powder. Add the eggs. Add the butter and the milk and cranberries.
Combine the mixture with only a few strokes.
Butter the muffin tins and fill with the batter. Sprinkle the muffin tops with sugar.
Bake 20-25 minutes.
Perfect muffins for a quick breakfast.

Catherine, Cranberry muffins are tied with blueberry muffins for my morning wake up with coffee. The good news is that with dried cranberries...this version is good year around while blueberry muffins are best when the local blueberry crop is front and center.
