Oven-Fried Panko Chicken Fingers with Ginger Dressing

- 1 1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch strips
- 2 cups all-purpose flour
- 2 cups Panko Japanese-Style breadcrumbs
- 3 eggs, beaten
- Olive oil, for drizzling
- 1 tablespoon Chili Garlic Sauce
- 1/2 inch of fresh ginger, Grated
- 2 tsp. Sesame seeds
- 1 tablespoon Sesame oil
- 1 clove garlic, crushed and sliced
- 1/4 cup vinegar
- 1/2 cup olive oil
- 2 tablespoons water
Instructions
- Preheat oven to 350 °F.
- In individual bowls, place flour, eggs, and panko breadcrumbs. Dredge the chicken first in the flour, then the eggs, and finally the panko.
- Place in a baking dish and drizzle a little olive oil over the chicken.
- Bake for about 20-25 minutes.
- Prepare the dressing and drizzle over the chicken.
- This is a very refreshing way to serve chicken with a salad.
