These Plain Bakery-Style Muffins are moist, tender, and just sweet enough for a perfect morning treat with coffee or tea.

Ingredients

  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup plain Greek yogurt
  • 1/2 cup whole milk
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350 degrees F° and line a muffin tray with parchment paper. Set aside.
  2. In a large bowl, whip butter, eggs, and sugar.
  3. Add yogurt and whip again until smooth.
  4. Add the dry ingredients and mix until half incorporated.
  5. Slowly add the milk, mixing on low until a thick, smooth batter comes together.
  6. Divide the batter evenly between the prepared muffin tray.
  7. Bake for 25-30 minutes, depending on the range of your oven and the size of your muffin pan (I used a large muffin pan). The muffins will be golden, and the cake tester will come out clean.
  8. Remove and let rest on a wire rack to cool.
  9. Serve with your favorite jam, a pat of butter, or a drizzle of honey. Enjoy!
