- 1 lb. mini colored potatoes, halved
- 3 tablespoons olive oil
- 3-4 cloves of garlic, minced
- 2 teaspoons herbed sea salt
- 1 large onion, thinly sliced
- 2 teaspoons sugar
Instructions
- Preheat oven to 400 degrees F.
- Wash and cut the potatoes, transferring them to a sheet pan.
- Drizzle with olive oil, minced garlic, and herbed sea salt. Toss until all the potatoes are coated.
- Roast in the oven for about 40 minutes, flipping the potatoes halfway through.
- Meanwhile, in a dry cast-iron pan over high heat, cook down the onions. Sprinkle with sugar to help with caramelization. Transfer the onions to a small bowl until the potatoes are done.
- Once the potatoes are finished roasting, mix in the caramelized onions. Serve alongside eggs and toast. Enjoy!
