Ingredients

  • 1 lb. mini colored potatoes, halved
  • 3 tablespoons olive oil
  • 3-4 cloves of garlic, minced
  • 2 teaspoons herbed sea salt
  • 1 large onion, thinly sliced
  • 2 teaspoons sugar

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash and cut the potatoes, transferring them to a sheet pan.
  3. Drizzle with olive oil, minced garlic, and herbed sea salt. Toss until all the potatoes are coated.
  4. Roast in the oven for about 40 minutes, flipping the potatoes halfway through.
  5. Meanwhile, in a dry cast-iron pan over high heat, cook down the onions. Sprinkle with sugar to help with caramelization. Transfer the onions to a small bowl until the potatoes are done.
  6. Once the potatoes are finished roasting, mix in the caramelized onions. Serve alongside eggs and toast. Enjoy!
