Ingredients

  • 2 lbs. of filet of flounder
  • Neutral oil for frying

For the Coating:

  • 1 cup of flour
  • 1 cup of milk
  • 2 eggs
  • 1 cup of Panko, plus more as needed

Instructions

  1. Create a dredging station for the filets: one shallow dish for flour, one with the milk and eggs beaten together, and one with Panko.
  2. Dredge the flounder in the flour first, then in the milk and egg mixture, and finally in the Panko.
  3. Heat a large cast iron frying pan on medium heat and add about a 1/4 inch of neutral oil.
  4. Carefully place the prepared slices in the heated oil, making sure not to overcrowd the pan. Cook for 2-3 minutes per side, until the flounder is cooked through. The cooking time depends on the thickness of the flounder filets, but the filets should flake easily.
  5. Carefully, place the cooked flounder on a platter lined with paper towels to absorb any excess oil.
  6. Serve with lemon wedges and your favorite condiment.
