Ingredients

Units Scale
  • 5 lb. fresh ham

For the Rub:

  • 1 bunch of fresh Italian parsley, chopped
  • 5-6 cloves of garlic, chopped
  • 1 1/2 tsps. of salt
  • 1 1/2 tsps. of coarse ground black pepper
  • 1 1/2 tsps. of Korean red pepper flakes
  • 3 tbs. of olive oil

  3. Massage the rub into the skin and through the crevices of the meat.  Try to push the rub deep into the meat and all over the skin.
  4. Place in a bowl.  Cover the bowl with plastic wrap and place in the refrigerator for at least an hour or more.
  5. Preheat oven 325 degrees F.
  6. Place the meat in a large cast iron frying pan prepared with parchment paper and cook for 40 minutes per pound until the internal temperature reaches 145 degrees F. when checked with a food thermometer.
  7. Let the ham rest for 10-15 minutes before carving.
