Wonton Soup

Ingredients

For the wontons:

  • 1 lb. ground pork
  • 1-inch knob fresh ginger, grated
  • 2 large cloves garlic, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon rice wine vinegar
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh chili paste
  • 1 package wonton wrappers
  • Water, for sealing the wontons

For the soup:

  • 1 tablespoon sesame oil
  • 3 cloves garlic, grated
  • 1/2-inch knob fresh ginger, grated
  • 2 green onions, chopped plus more for garnish
  • 1/4 head of cabbage, sliced (optional)
  • 1/2 cup dehydrated shiitake mushrooms, (let soak for about 10 minutes in boiling water before cooking)
  • 10 cups chicken stock
  • 1 tablespoon soy sauce
  • 2 teaspoons fresh chili paste
  • Gochugaru, for topping
  • Cilantro, for garnish

Instructions

  1. In a large bowl, combine all ingredients for the wontons.
  2. Add about 1 teaspoon filling in the center of each wonton wrap; be careful not to overfill your wontons or they'll break open.  Lightly brush the edges of the wrapper with water.  Fold over and press to seal.  Brush the bottom of the folded wonton with a little water, and fold once again to create a 'bonnet' shape as shown in the post.
  3. This recipe yields about 40 wontons.  You can freeze whatever you have left over for future recipes.
  4. Place the wontons on a baking sheet, lightly dusted with cornstarch.  Refrigerate until ready to add to the soup.
  5. For the soup, start in a large pot.  Add sesame oil and cook the garlic, ginger, green onions, cabbage, and mushrooms until the onions are cooked down.
  6. Add the chicken stock, soy sauce, and chili paste.  Stir and let cook until the soup has come to a boil, lower to a simmer.
  7. Add the wontons and let cook for about 5-7 minutes, until the wontons have floated to the top and are heated through.  The wontons will also 'scrunch' in their appearance letting you know they're done.  Be careful not to overcook them, or they will fall apart into the soup.
  8. Serve with a sprinkle of gochugaru, additional chopped green onions, and cilantro.  Enjoy!
