Cheesy Herb Crackers

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup grated parmesan cheese
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground thyme
  • 1 teaspoon ground rosemary
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup ice water

Instructions

  1. In a food processor, blend flour, cheese, herbs, and spices, along with cubed butter.   Blend until crumbly.
  2. Gradually add the ice water, until a soft dough forms.  You may need to use more or less than 1/2 cup so be sure to add gradually.
  3. Preheat oven to 400 degrees F.
  4. Onto a lightly floured surface, divide the dough and roll out each half to about 1/4 inch thickness.  Using your desired cookie cutter or pastry knife, cut out your crackers.
  5. Lay them out on a parchment-lined baking sheet and bake for about 9-10 minutes, depending on your oven range.
  6. Let the crackers cool on a wire rack before serving.
