Ingredients
- 1 cup AP flour
- 2/3 cup bread flour
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup (1 stick) butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tablespoon vanilla
- 1/2 cup mini marshmallows
- 1/2 cup crushed graham crackers
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. and line two baking sheets with parchment paper. Set aside.
- In a small saucepan, melt butter until starts to bubble and turns to a deep brown. Remove from the heat and let cool until ready to use.
- In a large bowl, whisk together flours, baking soda, and salt. Set aside.
- In the bowl of your stand mixer with the paddle attachment, beat butter, sugar, eggs, and vanilla. Add the dry ingredients and beat again until a soft cookie dough forms. Add the marshmallows, graham crackers, and chocolate chips, just until incorporated.
- Using a rounded tablespoon or a cookie scooper, line the cookies out on the prepare baking sheets, leaving 1-inch of space between each. Taking the back of spoon, slightly flatten each cookie.
- Bake for 10 minutes or until the marshmallows are slightly golden.
- Transfer the cookies to a cooling rack and leave to set for a few minutes before serving.
Notes
Cookies will keep for about five days if stored in an airtight container.
