Almond Butter Cookies & OLBAS Tea

Ingredients

  • 1 cup almonds - slightly toasted
  • 1/2 cup granulated sugar
  • 1/4 tsp. salt
  • 1 cup butter (2 sticks) unsalted - softened
  • 2 cups flour
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • Confectioners' sugar - for dusting

Instructions

  1. Preheat 350 degrees F.
  2. Place the sugar, salt and toasted almonds in a food processor and process until smooth.
  3. In a mix-master combine the softened butter and remaining sugar and mix until smooth and creamy.
  4. On a low speed gradually add in the ground almond mixture, extracts and slowly add in the flour.
  5. Divide the dough in half and wrap in a plastic and refrigerate for about 30 minutes.
  6. Using half the dough at a time spoon a tsp. of dough and form into crescents. Place on a non-stick baking sheet or a sheet lined with parchment paper about 1 inch apart.
  7. Bake about 15 - 20 minutes or until the edges are slightly golden.
  8. Remove from baking sheet and dust immediately with powdered sugar.
