Mediterranean Falafel & Summer Wine Selections

Ingredients

Units Scale
  • 29 oz. can of chick peas - drained and pat dry
  • 4 - 6 cloves of garlic
  • 1/4 cup of fresh Italian parsley - stems removed
  • 6 - 8 fresh basil leaves
  • 2 tsp. capers
  • 4 tbs. - Fresh Romano cheese grated
  • 6 tbs. of flour
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. red pepper flakes
  • Canola oil - for frying

Instructions

  1. Combine all of the above ingredients in a food processor and process to a creamy paste.
  2. Form into desired size balls.
  3. Heat a large cast-iron frying pan with ½ to ¾ inch canola oil.
  4. Carefully place the falafel balls into the oil and fry until a beautiful golden color forms on all sides.
  5. Place on a plate prepared with paper towels.
  6. Serve with a tzatziki sauce or sour cream.
