Ingredients
For the Cashew Crusted Chicken:
- 6 - 8 bone in chicken thighs - with or without the skin
- 1 cup raw cashews, lightly grilled, cooled and coarsely chopped in the food processor
- 1 1/2 cups all-purpose flour
- 1 1/2 cups bread crumbs - seasoned with salt, black pepper, paprika and dried oregano - about 1/2 tsp. each
- 2 cups Pacific Foods Cashew Unsweetened Vanilla Non-Dairy Beverage
- Honey for drizzling over the chicken when serving
For the Dairy Free Cashew Gravy:
- 1 shallot - sliced thin
- 1 tbs. butter
- 1 - 2 tbs. olive oil
- 2 cloves garlic - grated
- Zest of 1 lemon
- 2 1/2 cups Pacific Foods Cashew Unsweetened Vanilla Non-Dairy Beverage
- 1/2 cup raw cashews- lightly grilled and cooled and coarsely chopped in a food processor
- 12 Shiitake mushrooms
- 3/4 tsp. salt
- 1/2 tsp. ground black pepper
- 1/4 - 1/2 tsp. red pepper flakes - depending on how spicy your taste is
- 1 tbs. lemon juice
- 1 sprig of fresh rosemary
Instructions
For the Cashew Crusted Chicken:
- Preheat Oven 350 degrees F.
- Set up three shallow bowls; one with the flour, one the seasoned bread crumbs and processed cashews and finally one with the Cashew Non-Dairy Beverage.
- Dredge the chicken thighs first in the flour, then in the Cashew Non-Dairy Beverage and finally in the cashew-bread crumb combo.
- Set the prepared chicken in a baking dish or non-stick baking pan and drizzle with olive oil.
- Bake until a beautiful golden color is achieved and the juices from the chicken run clear.
- The baking time will be about 45 – 50 minutes.
For the Dairy Free Cashew Gravy:
- Heat a large cast iron frying pan and place the cashews in a dry pan to grill to a lightly golden color.
- Reserve a few whole cashews for garnish when serving.
- Remove the cashews from the pan and allow to cool before giving a few good chops in the food processor.
- Place the shiitake mushrooms in a heated cast iron frying pan and drizzle with olive oil. Grill until a nice golden color is achieved and the remove from the pan and set aside.
- Heat a large cast iron frying pan with 2 tbs. of olive oil and a tbs. of butter.
- Add the sliced shallots, grated garlic, lemon zest and rosemary and sauté until the garlic is fragrant.
- Add the seasonings and toss.
- Add the Pacific Foods Cashew Unsweetened Vanilla Non-Dairy Beverage, processed cashews, and lemon juice and simmer on a gentle heat for 5 – 7 minutes to slightly thicken the sauce.
- Plate the chicken thighs topped with the shiitake mushrooms, cashew gravy, a drizzle of honey and fresh ground black pepper.
- Prep Time: 15 minutes
- Cook Time: 45 minutes
