Ingredients
- homemade flat breads or store bought
For the Shrimp Salad:
- 1 lb. of cooked shrimp
- 15.5 oz. can of small white beans - drained and rinsed
- 1 pint of grape tomatoes - quartered
- 1 small red onion - sliced thin
- 3 cloves of garlic - chopped fine
- 6 - 7 fresh basil leaves - chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 1/4 - 1/2 cup of fresh grated Asiago cheese or Parmesan cheese
- 4 tbs. olive oil
- Juice of 1 fresh lemon
Instructions
- In a large bowl combine the shrimp, beans, tomatoes, sliced onion, basil leaves, seasonings, olive oil and fresh lemon juice, grated cheese and toss.
- Refrigerate until ready to use.
- Serve with warmed flat breads if desired.
