Ingredients

For the Shrimp Salad:

  • 1 lb. of cooked shrimp
  • 15.5 oz. can of small white beans - drained and rinsed
  • 1 pint of grape tomatoes - quartered
  • 1 small red onion - sliced thin
  • 3 cloves of garlic - chopped fine
  • 6 - 7 fresh basil leaves - chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. dried oregano
  • 1/4 - 1/2 cup of fresh grated Asiago cheese or Parmesan cheese
  • 4 tbs. olive oil
  • Juice of 1 fresh lemon

Instructions

  1. In a large bowl combine the shrimp, beans, tomatoes, sliced onion, basil leaves, seasonings, olive oil and fresh lemon juice, grated cheese and toss.
  2. Refrigerate until ready to use.
  3. Serve with warmed flat breads if desired.
