Ingredients

  • 1 bag of Kosher Tortilla Chips
  • 2 - 10 oz. can of RO*TEL® Diced Tomatoes and Green Chiles
  • 1/2 cup of fresh cilantro - chopped
  • 16 oz. of vegan cheddar cheese - shredded
  • Juice of 1 lime
  • 1/2 tsp. ground black pepper
  • 1 tsp. ground cumin
  • 1 avocado sliced, to top

Instructions

  1. Preheat Oven 350 degrees F:
  2. Place the Ro-Tel Diced Tomatoes and Green Chiles in a bowl. Add the chopped cilantro, lime juice, seasonings, and stir.
  3. On a large baking pan place a layer of tortilla chips. Spoon the Ro-Tel Diced Tomato mixture over the layer of Tortilla chips. Sprinkle the shredded cheese over the top and repeat with another layer of Tortilla chips followed by the Ro-Tel mixture and finally ending with the shredded cheese.
  4. Bake for 10 – 12 minutes until the cheese is melted.
