Sweet and Spicy Orange Beef Stir Fry

Ingredients

For the Sweet and Spicy Orange Sauce:

  • 1 inch piece of fresh ginger, grated
  • 3 cloves of garlic, grated
  • 1/2 cup of soy sauce
  • 1 tsp. red pepper flakes
  • 1/2 cup orange marmalade
  • 2 tbs. sesame oil
  • 1/4 cup cider vinegar

For the Stir-Fry:

  • 2 boneless beef shell steaks (about 3/4 inch)
  • 1 lb. rice noodles
  • 10 oz. Organic Frozen Broccoli
  • 10 oz. Organic Frozen Kale
  • 6 garlic cloves, chopped
  • Olive oil

Instructions

For the Sweet and Spicy Orange Sauce:

  1. In a medium-sized bowl, combine all of the ingredients for the sweet and spicy orange sauce; whisk and set aside.

For the Stir-Fry:

  1. Prepare the rice noodles as directed and set aside.
  2. Heat a large cast-iron frying pan with 2-3 tablespoons of olive oil and 2 cloves of chopped garlic. Place the steaks in the frying pan and cook about 3 minutes per side for medium rare. Let the steaks rest about 5 minutes before slicing.
  3. Heat the same large cast iron frying pan with 2-3 tablespoons of olive oil and 2 cloves of chopped garlic place the frozen kale in the frying pan and sauté two to three minutes. Remove from pan and set aside. Repeat this process with the frozen broccoli taking just a bit longer for the broccoli to heat and warm through.
  4. Plate the rice noodles and gently toss with the sautéed organic kale and broccoli. Top the noodles with the sliced steak and spoon the sweet and spicy orange sauce over the top.
