Strawberry Spring Galette

Ingredients

Units Scale
  • 2 cups all purpose flour
  • 1/2 cup unsalted butter, cold
  • 1/4 tsp. salt
  • 2 tbs. sugar
  • 3 - 4 tbs. cold water
  • 1/4 cup of milk for dusting the border of the crust
  • 1/4 cup of sugar for dusting the border of the crust.

For the Filling:

  • 2 quarts of fresh strawberries - quartered
  • Zest of 1 lemon
  • 1/4 cup flour
  • Dash of cinnamon
  • Dash of ground cloves

Instructions

  1. Preheat Oven 350 Degrees F.
  2. In a large bowl place the quartered strawberries; add the flour, sugar, cinnamon, lemon zest, and ground cloves and toss. Set aside while preparing the dough.
  3. Prepare a baking pan with parchment paper.
  4. Place the flour in a large bowl along with the salt and sugar.
  5. Add the cubed butter and mash with a pastry cutter or pinch with your fingers until the flour is crumbly.
  6. Gradually add the water just until the dough forms and comes together.
  7. Gently form into a ball.
  8. On a floured surface roll out the dough to approximately ¼ inch thickness.
  9. Roll the dough around a floured rolling pin and unroll onto the pan prepared with the parchment paper.
  10. Place the filling in the middle of the dough, leaving a border to fold over and pinch closed.
  11. Dust the border of the crust with milk and sprinkle sugar around the crust.
  12. Bake 50 – 55 minutes or until the crust is a beautiful golden color.
  13. Best served when warm with vanilla ice cream or fresh whipped cream.
