Ingredients
- 1/2 loaf of good Italian bread - sliced to 1/4 inch thick
- Olive oil
- Salt & Pepper to taste
For the Green Pea Spread:
- 2 cups of frozen green peas
- 1/4 cup of fresh Italian parsley
- 4 - 5 fresh basil leaves
- 3 tbs. honey
- Juice of 1/2 lemon
- 2 - 3 tbs. of grated Parmesan cheese
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- Dash of fresh grated nutmeg
- 2 tbs. olive oil
- Crumbled feta cheese for garnish on the crostini
Instructions
For the bread:
- Preheat Oven 350 degrees F.
- Brush both sides of the bread with olive oil and season with salt, pepper. Bake until golden, about 15 minutes; turning the crostini once during the baking.
For the Green Pea Spread:
- Place all of the ingredients for the spread in a food processor and process until a smooth consistency is achieved.
- Refrigerate until ready to use.
