Ingredients

Units Scale
  • 1/2 loaf of good Italian bread - sliced to 1/4 inch thick
  • Olive oil
  • Salt & Pepper to taste

For the Green Pea Spread:

  • 2 cups of frozen green peas
  • 1/4 cup of fresh Italian parsley
  • 4 - 5 fresh basil leaves
  • 3 tbs. honey
  • Juice of 1/2 lemon
  • 2 - 3 tbs. of grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • Dash of fresh grated nutmeg
  • 2 tbs. olive oil
  • Crumbled feta cheese for garnish on the crostini

Instructions

For the bread:

  1. Preheat Oven 350 degrees F.
  2. Brush both sides of the bread with olive oil and season with salt, pepper. Bake until golden, about 15 minutes; turning the crostini once during the baking.

For the Green Pea Spread:

  1. Place all of the ingredients for the spread in a food processor and process until a smooth consistency is achieved.
  2. Refrigerate until ready to use.
