Ingredients

For Pancakes:

  • 1 1/2 cups flour - sifted
  • 1 tsp. salt
  • 2 tbs. sugar
  • 2 tsp. baking powder
  • 1 egg
  • 3 tbs. melted butter - then cooled slightly
  • 1 1/4 cups milk
  • Powdered sugar for dusting
  • Maple Syrup or Honey for drizzling

For the Fruit & Sauce:

  • 3 peaches - peeled and sliced into wedges
  • 1 1/2 cups of fresh blueberries
  • 3 - 4 tsp. of your favorite jam
  • 2 tbs. sugar
  • 2 - 3 tbs. butter

Instructions

For Pancakes:

  1. Sift the flour with the sugar, salt and baking powder into a large bowl.
  2. In a small bowl beat the egg; while slowly adding the butter and milk mixture.
  3. Stir the wet ingredients into the flour mixture.
  4. Heat a griddle with a pat of butter and ladle the batter onto the hot griddle.
  5. Cook about 2 – 3 minutes, turning the pancakes only once; continue cooking on the other side another side until the pancake is done.

For the Fruit & Sauce:

  1. Heat a large cast iron frying pan with the butter and add the fruit.
  2. Sprinkle the fruit with the sugar.
  3. Add the jam and gently move the fruit around to incorporate the jam around the fruit.
  4. Let simmer on a low heat while preparing the pancakes.
