Ingredients

For the Salad:

  • 1 bunch of fresh arugula
  • 1 red onion - sliced thin
  • 2 kiwis - sliced
  • 1 tomato - sliced thin
  • 1 zucchini - sliced thin lengthwise

For the Vinaigrette:

  • 3 tbs. brown sugar
  • 2 tbs. lemon juice
  • 2 tbs. cider vinegar
  • 1/2 cup olive oil
  • Dash of salt
  • Dash of fresh ground black pepper

Instructions

For the Salad:

  1. Roll the zucchini slices and secure with a wooden toothpick.
  2. Place the rolled zucchini on the plated tomato slices and stuff the rolled zucchini with the arugula. Garnish with the onion and kiwi slices and drizzle with the vinaigrette.

For the Vinaigrette:

  1. Combine all of the ingredients for the vinaigrette and stir.
