Gorgonzola and Cream Cheese Stuffed Mushrooms

Ingredients

  • 2 quarts of baby bella mushrooms
  • 1 cloves of garlic
  • 1/4 cup fresh Italian parsley
  • 8 oz. of cream cheese
  • 4 oz. of Gorgonzola cheese
  • 3 tbs. milk
  • 1 tbs. lemon juice
  • 3 tbs. of butter
  • Bread crumbs for sprinkling

Instructions

  1. Gently remove stems from the mushrooms.
  2. Gently melt the butter then brush each mushroom with the butter.
  3. Preheat Oven 350 degrees F.
  4. Place the mushrooms cup side down on a baking sheet and bake for 8 – 10 minutes.
  5. Remove and set aside while preparing the filling.
  6. Place the gorgonzola cheese, cream cheese, garlic, parsley, lemon juice and the milk in a food processor and process until smooth and creamy.
  7. Fill each mushroom with the mixture then sprinkle each mushroom with the breadcrumbs; followed by a small drizzle of olive oil.
  8. Place the mushrooms on a baking sheet.
  9. Bake for 12 – 15 minutes.
