Chicken Cutlet Parmesan Heroes

Ingredients

For the Tomato Sauce:

  • 28 oz. can of Hunt's Tomatoes - Crushed
  • 28 oz. can of Ro*TEL Original Diced Tomatoes & Green Chilies
  • 1 red onion - sliced thin
  • 4 cloves of garlic - chopped
  • 1/4 cup of Italian parsley - chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. dried oregano
  • 1 tsp. of sugar
  • 3 tbs. olive oil
  • 2 - 3 tbs. grated Parmesan or Romano cheese

For the Chicken Cutlets:

  • 2 lbs. chicken cutlets - sliced thin
  • 1 cup of flour
  • 2 cups of Italian style bread crumbs
  • 2 eggs
  • 1 cup of milk
  • Vegetable oil for frying
  • 2 loaves of Italian bread - sliced in half
  • 16 oz. of mozzarella - shredded
  • 2 cups of fresh baby spinach
  • Grated Parmesan or Romano cheese

Instructions

For the Tomato Sauce:

  1. Heat a sauce pan with the olive oil.
  2. Add the garlic, onion and parsley and sauté until the garlic is fragrant and the onion is softened.
  3. Add the Hunt’s Tomatoes and the Ro*TEL Diced Tomatoes & Green Chilies.
  4. Add the seasonings and grated cheese simmer on low for about 25 - 30 minutes.

For the Chicken Cutlets:

  1. Beat eggs in a shallow bowl and add the milk to the eggs. Set another shallow bowl with the flour and a third shallow bowl with the bread crumbs.
  2. Dredge the cutlets first in the flour then in the milk and eggs and finally coat in the bread crumbs.
  3. Heat a large cast iron frying pan over medium heat with about a half inch deep of vegetable oil.
  4. Carefully place the cutlets in the heated oil. Do Not Overcrowd the pan.
  5. Cook about 4 minutes on one side and carefully turn over and finish cooking on the other side for about another 3 – 4 minutes or until the juices run clear. The cooking time will depend on the thickness of the cutlets.

Preparing the Parmesan Heroes:

  1. Preheat Oven 350 degrees F.
  2. Place the sauce of each side of the bread.
  3. Place shredded mozzarella on each side of the bread, followed by grated Parmesan or Romano cheese.
  4. Place a cutlet on each side of the bread.
  5. Place baby spinach leaves on the cutlets and close the hero.
  6. Place the hero’s on a baking sheet and bake for 10 -12 minutes to heat through and melt the cheese.
