Ingredients

Units Scale
  • 1/2 cup milk
  • 2 eggs
  • 1 tablespoon canola oil
  • 3/4 cup unbleached all-purpose flour

Instructions

  1. Place oven rack in the lowest position and preheat oven 450 degrees F.
  2. In a medium bow, whisk together milk, eggs and 1 tablespoons canola oil; add flour and whisk until mixture is smooth.
  3. Generously oil six muffin cups' place muffin tin in oven for 3 minutes. Remove tin from oven and immediately spoon batter into cups, filling 3/4 full. Reduce oven temperature to 350 degrees F and bake for 15 minutes. Serve immediately.
