Ingredients

  • 3 cups flour - sifted
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup sugar
  • 1 1/2 cup prunes
  • 1/2 cup raisins
  • 1 cup water
  • 1 tbs. fresh lemon juice
  • 1 cup chopped walnuts
  • 1/2 cup brown sugar
  • 3 eggs
  • 1/2 cup cooking oil
  • 1/2 cup white chocolate chips - roughly chopped
  • Raw sugar for sprinkling
  • Butter for preparing a bundt pan

Instructions

  1. Preheat Oven 350 degrees F.
  2. Place the prunes and the raisins in a small sauce pot with one cup of water and one tablespoon of fresh lemon juice. Let the prunes come to a slight simmer and turn the heat off. Leave in the pot and allow to cool down while preparing the rest of the ingredients.
  3. Combine the flour, white sugar, salt, baking powder and baking soda and sift together into a large bowl.
  4. Add the chopped walnuts and white chocolate chips to the flour mixture and combine.
  5. In a small bowl combine the brown sugar, eggs and cooking oil and combine well with a fork.
  6. Strain the prunes, reserving the water.
  7. Carefully, chop the prunes and raisins roughly with a sharp. Add the chopped prunes back into the reserved water and add to the flour mixture.
  8. Add the beaten eggs and brown sugar to the flour and prune mixture.
  9. Prepare a bundt pan with butter.
  10. Place the batter into the bundt pan and sprinkle the top with the raw sugar.
  11. Bake for 50 – 60 minutes or until the toothpick test comes back clean.
