Ingredients
- 3 cups flour - sifted
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup sugar
- 1 1/2 cup prunes
- 1/2 cup raisins
- 1 cup water
- 1 tbs. fresh lemon juice
- 1 cup chopped walnuts
- 1/2 cup brown sugar
- 3 eggs
- 1/2 cup cooking oil
- 1/2 cup white chocolate chips - roughly chopped
- Raw sugar for sprinkling
- Butter for preparing a bundt pan
Instructions
- Preheat oven 350 degrees F.
- Place the prunes and the raisins in a small sauce pot with one cup of water and one tablespoon of fresh lemon juice. Let the prunes come to a slight simmer and turn the heat off. Leave in the pot and allow to cool down while preparing the rest of the ingredients.
- Combine the flour, white sugar, salt, baking powder and baking soda and sift together into a large bowl.
- Add the chopped walnuts and white chocolate chips to the flour mixture and combine.
- In a small bowl combine the brown sugar, eggs and cooking oil and combine well with a fork.
- Strain the prunes, reserving the water.
- Carefully, chop the prunes and raisins roughly with a sharp. Add the chopped prunes back into the reserved water and add to the flour mixture.
- Add the beaten eggs and brown sugar to the flour and prune mixture.
- Prepare a bundt pan with butter.
- Place the batter into the bundt pan and sprinkle the top with the raw sugar.
- Bake for 50 – 60 minutes or until the toothpick test comes back clean.
